Nicoise Salad

  • 4-6    ea  hard boiled eggs, halved

  • ¾   cup  mixed pitted olives

  • 3-4    cup  romaine lettuce

  • ⅓   cup  California Pizza Kitchen® Caesar Dressing

  • Directions
  • Bring a large pot of salted water to a boil. Prepare an ice bath.
  • Blanch the green beans for 3 minutes, until bright green and tender. Do not drain water, but transfer to the ice bath and let cool completely.
  • Add the potatoes to the boiling water. Reduce heat to low and simmer for 15 minutes, until potatoes are fork tender. Drain and run under cold water to cool.
  • Assemble salad with all ingredients and toss with caesar before serving.
