Directions
Cook quinoa according to package directions. Remove from heat and let cool. Season with salt and pepper.
Heat oil in a small skillet over medium heat. Add kale and sauté for 4-5 minutes, until wilted. Season with salt and pepper.
Divide ingredients between 4 bowls. Arrange ingredients and pour dressing over the top. Toss to coat.
