- 1 lbs Fresh shrimp, peeled and deveinedlbsFresh shrimp, peeled and deveined
- 3 tbsp Oil, dividedtbspOil, divided
- 1 tbsp Lime juice, freshly squeezedtbspLime juice, freshly squeezed
- 1 tbsp Chili powdertbspChili powder
- 1 tsp SalttspSalt
- ¾ tsp Cumin powdertspCumin powder
- ¼ tsp Garlic powdertspGarlic powder
- 1 ea Red bell pepper, slicedeaRed bell pepper, sliced
- 1 ea Orange bell pepper, slicedeaOrange bell pepper, sliced
- 1 ea Green bell pepper, slicedeaGreen bell pepper, sliced
- 1 lg red onion, halved and thinly slicedlgred onion, halved and thinly sliced
- 5 oz Mixed greensozMixed greens
- ⅓ cup California Pizza Kitchen® Ranch DressingcupCalifornia Pizza Kitchen® Ranch Dressing
- 1 ea Tortillas, lime wedges and cilantro for servingeaTortillas, lime wedges and cilantro for serving
- Stir together all spices in a bowl.
- In a large bowl, toss together shrimp, half of oil and half of spice mixture.
- In a separate bowl, toss together vegetables and remaining oil and spices.
- Heat two large skillets over medium heat.
- Sauté vegetables for 10-15 minutes, until softened and slightly caramelized.
- Sauté the shrimp on medium heat for 2-3 minutes on each side, or until cooked through.
- Serve warm on top of salad greens with tortillas, ranch drizzle, and any other desired toppings.
